Yumm Yummy Dinner: Spaghetti Squash Lasagna

If you are like me and LOVE Pasta, you will devour this dish!I made it this week and it was a huge hit! Always keep in mind; portion control and avoid excess calories (with this be mindful of any cheese you use).

Spaghetti Squash Lasagna with Ground Turkey


Prep Time: 30 Min
Cook Time: 1 Hr 15 Min
Ready In: 1 Hr 45 Min

Ingredients

  • 1 spaghetti squash, halved lengthwise and seeded
  • 3/4lb ground turkey
  • 1 onion, chopped
  • 2 tablespoons minced garlic
  • Spahgetti Sauce (pick your favorite)
  • 5 mushrooms
  • 1 green bell pepper
  • 1 (15 ounce) can black olives, chopped
  • 1 cup shredded mozzarella cheese (optional)
  • 1 cup shredded Parmesan cheese (optional)

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Spray a baking sheet with a thin layer of cooking spray. Place squash halves cut side down on the baking sheet.
  2. Bake squash 35 minutes in the preheated oven, or until a knife can be easily inserted. Remove from oven, and cool.
  3. Meanwhile, spray a non-stick saucepan brown ground turkey
  4. In a medium saucepan sauté (with small amount of cooking spray) the onion and garlic until golden brown. Combine with ground turkey
  5. Chop mushroom and green peppers, cook in small amount of water until soft.
  6. Remove squash strands with a fork, reserving the shells. Layer each half with a spoonful of the sauce, a layer of spaghetti squash strands, veggies, and mozzarella cheese. Repeat layers until shells are full, or until all of the ingredients are used. Top with Parmesan cheese.
  7. Bake for 20 minutes in the preheated oven, or until Parmesan cheese melts.
