Mmmmm Good: Garlic Lime Chicken with Mango Salsa

Summer smells of citrus and warmth, why shouldn’t my chicken? Being on a strict diet means I have to find ways to spice up boring ole’ chicken…this was to die for!

Garlic Lime Chicken with Mango Salsa
Prep Time: 25 Min
Cook Time: 15 Min
Ready In: 40 Min

Ingredients for Chicken

  • 4 boneless skinless chicken breasts
  • 1 large lime  
  • 4 garlic cloves (you can also use minced garlic)
  • 1 tablespoon olive oil

Ingredients for Mango Salsa

  • 2 ripe mangoes, peeled and chopped
  • 3 very ripe roma tomatoes, chopped
  • 1 sweet red peppers or 1 yellow sweet pepper, seeded and chopped
  • 2 jalapeño
  • 2 green onions, chopped
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juice of
  • salt and pepper (to taste, try to go very light on the salt)
  • 4 cups steamed short grain cooked brown rice


Directions
  1. Marinate the chicken w/ the juice of one lime and the oil and garlic in a zip lock bag in the fridge for at least 2 hrs or overnight.
  2. For the salsa mix all the ingredients and season with salt and pepper to taste, set aside for the flavors to blend, mean while grill the chicken breasts on low heat till no longer pink.

Side Note: Serve mango salsa drizzled over chicken and rice! Add cilantro to beautify the plate! If you are dieting use judgment on  the amount much salsa you eat, fruit can be a sneaky lil bugger.
